Rumbi Island VooDoo Chicken Salad

THIS IS SUCH A GREAT SALAD!! I GOT THIS RECIPE FROM GOOD THINGS UTAH.

VOODOO CHICKEN SALAD:
4 OZ SPRING MIX LETTUCE ( I LIKE TO ADD ROMAINE AS WELL)
1 OZ FETA CHEESE
1 OZ DICED TOMATO
2 OZ VOODOO DRESSING
PINCH OF FRIED TORTILLA STRIPS
1 BONELESS CHICKEN BREAST GRILLED AND CUBED

MIX TOGETHER AND SERVE

VOODOO DRESSING
1/4 C DIJON MUSTARD
1 T FRESH LIME JUICE
2 TSP CHILI PASTE
1 TSP CRUSHED RED PEPPER
3/4 C LITE MAYO
3 C SESAME OIL
1/2 C RICE WINE VINEGAR
1/2 SOY SAUCE
1/2 C WHITE SUGAR. (I HAVE USED SPLENDA AND CAN'T TASTE A DIFFERENCE)
2 T MINCED GARLIC
1 T MINCED GINGER

THIS MAKES A TON OF DRESSING, I WOULD RECOMMEND CUTTING THIS IN HALF ATLEAST. :)
