So we had our 1 year Anniversary. We both took the entire week off of work so that we could just spend some time together and it has been heaven! Mitch took me to the Roof for our Anniversary. Neither of us had been and it was incredible! He asked if we could sit across from the temple, the night just couldnt have gotten any better.

Rumbi Island VooDoo Chicken Salad
THIS IS SUCH A GREAT SALAD!! I GOT THIS RECIPE FROM GOOD THINGS UTAH.
VOODOO CHICKEN SALAD:
4 OZ SPRING MIX LETTUCE ( I LIKE TO ADD ROMAINE AS WELL)
1 OZ FETA CHEESE
1 OZ DICED TOMATO
2 OZ VOODOO DRESSING
PINCH OF FRIED TORTILLA STRIPS
1 BONELESS CHICKEN BREAST GRILLED AND CUBED
MIX TOGETHER AND SERVE
VOODOO DRESSING
1/4 C DIJON MUSTARD
1 T FRESH LIME JUICE
2 TSP CHILI PASTE
1 TSP CRUSHED RED PEPPER
3/4 C LITE MAYO
3 C SESAME OIL
1/2 C RICE WINE VINEGAR
1/2 SOY SAUCE
1/2 C WHITE SUGAR. (I HAVE USED SPLENDA AND CAN'T TASTE A DIFFERENCE)
2 T MINCED GARLIC
1 T MINCED GINGER
THIS MAKES A TON OF DRESSING, I WOULD RECOMMEND CUTTING THIS IN HALF ATLEAST. :)

GO to the mall!!!!!!!!!!!!
Okay so I probably shouldnt be posting this but I need you to go to the mall as soon as possible. Go to a Dillards, Macy's or Nordstrom as fast as you can. There was a class action lawsuit that requires those 3 stores to give free merchandise to people who bought cosmetics with in the last 7 years or something like that. Basically you go in and sign your name and they either give you a freebe or you can pick one from a certain vendor. It doesnt last long but I know supplies at Nordstrom atleast are going very quickly. Just thought I would mention it! We have been very busy with people coming in and getting the free product.
Just thought that you might want to go.
I went to macy's and got Mitch a full size Armani Code shower gel, so hurry in :)

Resolutions! 2009
Last year was amazing! I got married to my best friend, moved out and started a totally new life. This year I am so excited to see what will happen! I was encouraged by my St. manager to set some realistic goals this year. I have really thought about it and these are what I have come up with. I hope that this year will be different and just maybe I can KEEP one of these. One of my friends, I think it was Nicole said that her New Years Resolution a couple of years ago was to gain weight!
This year I really want to cut back on my random spending! It is so hard working at Nordstrom! Whenever you see something cute, the natural reaction is..... with my discount, that is practically free!

So every year we get together with the Cleggs on Christmas Eve and have a party. We eat yummy food and play games. This year we decided to have a ugly sweater contest. Everyone needed to show up in the ugliest thing that they could find. Here are a few of the sweaters!! Mitch and I actually found ours at ROSS. Can you believe we found matching ones? They are awful!

This one is yummo
10 (7-inch) bamboo skewers
1/2 cup soy sauce
4 garlic cloves, forced through a garlic press
2 tablespoons Asian (toasted) sesame oil
2 teaspoons minced fresh peeled gingerroot
3 tablespoons sugar
1 tablespoon plus 1 teaspoon red wine vinegar
1 tablespoon plus 1 teaspoon sesame seeds, lightly toasted
2 teaspoons black pepper
1 1/2 pounds boneless shell steak, cut into 1-inch cubes
16 scallions, trimmed
Soak bamboo skewers in water for 30 minutes.
In a small bowl, whisk together the soy sauce, garlic, oil, gingerroot, sugar, vinegar, sesame seeds, and pepper. Thread the steak cubes loosely onto 8 of the skewers and thread the remaining skewers crosswise through the middle of each scallion so that the scallions stand parallel to one another. Put the beef and scallion kebabs in a shallow dish just large enough to hold them, pour the marinade over them, coating them well, and let the kebabs marinate, chilled, turning them frequently, for 25 minutes.
Grill the kebabs on an oiled rack set about 6 inches over glowing coals, turning them, for 10 minutes. Alternatively, the kebabs may be broiled under a preheated broiler about 4 inches from the heat in the same manner.) Remove the beef and scallions from skewers before serving.

my fun family
This is my dad with his crew. He has given so much time to IHC and it is neat to see how far he has gone with them! Im proud of you dad. He recently opened up the Intermountain Medical Center in Murray which was a 10 year project. Im glad that my dad always taught us to do our best and work hard.
This is my mom and Jeanne. Best witches in Fruit Heights!!
There is a store in our little town that had it's customer dress up as witches. My mom and her friend were so cute they actually made the paper!! Looking tough mom!

My mom invited us up to her place today to celebrate an early Thanksgiving. Chris and Ally are going to her familys house and Audrey and Brett will be with the Colemans this year. So while dinner was cooking my mom asked Chris if he would take something to the neighbors house. The next thing we know, I see my dog on the scooter with Ally and Chris flying down the road. Ingredients:
2 1/2 cups all-purpose flour
1 tsp. baking soda
3/4 tsp. salt
16 Tbs. (2 sticks) unsalted butter, at room temperature
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
2 eggs
2 tsp. vanilla extract
12 oz. valentine chocolate chips*
Directions:
Preheat an oven to 350°F. Spray a cookie sheet with nonstick cooking spray. Over a sheet of waxed paper, sift together the flour, baking soda and salt. Set aside. In the bowl of an electric mixer fitted with the flat beater, beat the butter on medium-low speed until smooth, about 30 seconds. Add the brown and granulated sugars, increase the speed to medium and beat until slightly fluffy, about 1 minute, stopping the mixer occasionally to scrape down the sides of the bowl. Add the eggs one at a time, beating well after each addition, then beat in the vanilla, stopping the mixer occasionally to scrape down the sides of the bowl. Reduce the speed to low, gradually add the flour mixture and beat until just combined. Using a rubber spatula, fold in the chocolate chips. Drop the dough by rounded tablespoonfuls onto the prepared pan, spacing the cookies about 2 inches apart. Bake until golden brown, 12 to 15 minutes. Transfer the pan to a wire rack and let the cookies cool on the pan for 5 minutes, then transfer them to the rack and let cool completely. Repeat with the remaining dough. Makes 36 cookies
So we just use semi sweet choc. chips instead of these colored ones but I swear these cookies turn out every single time!! I wont use anything else now... THEY ARE SO YUMMY

One of my favorite Apple Desserts to make
Ingredients:
For the dough:
2 1/2 cups all-purpose flour
1 tsp. salt
1 Tbs. sugar
16 Tbs. (2 sticks) cold unsalted butter, cut into 1/2-inch pieces
1/3 to 1/2 cup ice water
For the filling:
2 lb. apples, such as Granny Smith or Jonagold, peeled, cored and cut into 1/4-inch slices
1/2 cup sugar
2 tsp. fresh lemon juice
1 tsp. ground cinnamon
1/2 tsp. freshly grated nutmeg
1/4 tsp. salt
1 1/2 Tbs. cornstarch
1 egg, lightly beaten
Sugar for sprinkling
1/4 cup apricot jam
Lightly sweetened whipped cream for serving
To make the dough, put the flour, salt and sugar in a bowl. Put the butter in another bowl and place both bowls in the freezer for 10 minutes. Transfer the flour mixture to a food processor and pulse about 5 times to blend. Add the butter and pulse 15 to 20 times, until the mixture resembles coarse meal. Add 1/3 cup of the water and pulse twice. Squeeze the dough with your fingers; it should hold together but should not be sticky. If it is crumbly, add more water 1 Tbs. at a time, pulsing twice after each addition. Turn the dough out onto a lightly floured surface, gather into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for 1 hour. Place a baking sheet on the bottom rack of an oven. Position another rack in the lower third of the oven and preheat to 400°F. Line a second baking sheet with a Silpat nonstick liner and spray with nonstick cooking spray. To make the filling, in a large bowl, stir together the apples, sugar, lemon juice, cinnamon, nutmeg, salt and cornstarch. Set aside. Remove the dough from the refrigerator and let stand for 5 minutes. Place the dough between 2 sheets of lightly floured waxed paper and roll out into a 12-inch round. Brush off the excess flour. Transfer the dough to the prepared baking sheet, cover with plastic wrap and refrigerate for 30 minutes. Arrange the apple filling in the center of the dough, mounding the fruit slightly and leaving a 2-inch border. Gently fold the edges of the dough over the apples, pleating loosely. Brush the dough with the beaten egg. Lightly sprinkle sugar over the apples. Bake until the crust is golden and the apples are tender, about 1 hour. Transfer the pan to a wire rack and let the galette cool completely, about 1 hour. Just before serving, in a small saucepan over medium heat, warm the jam. Brush the apples with the jam and let cool. Cut the galette into 8 slices and accompany each slice with a dollop of whipped cream. Serves 8.
